Life in Colour

Aubergines / Eggplant / Brinjals are not to everyone’s taste, but to a non-meat eater they are often a substitute in many a meal. A ratatouille sauce – red onions, garlic, aubergines, courgettes, peppers and tomatoes, basil and thyme can be served with pasta, rice or just a hunk of crusty bread.

They come in all sorts of colours and shapes too. But despite the name I think this one is definitely purple!

I have lived in the UK for most of my life, but when young I definitely had wanderlust and even ended up living in South Africa for several years which was a wonderful experience.     1. Brinjal is used in South Africa and India. I’m not too keen on baba ganoush, but maybe I should try making my own.

    1. A pity we only see the same ones in the supermarkets. They come in lots of different shapes, sizes and colours.
